Development of Iron rich value-added products from locally available underutilized leaves

چکیده

The present study was done on underutilized green leafy vegetables which are rich source of iron and other micronutrients. Moreover there varieties in micronutrients whose consumption is very less general population due to lack awareness or ignorance. Therefore, the effort made develop value added products. Two commonly consumed products namely Idli Appe were developed from dry leaves. Curry leaves, Fenugreek Cauliflower Turnip leaves Beetroot taken 5 gm each. Acceptability evaluation prepared recopies performed by semi trained panel through 9 point Hedonic rating scale test. result revealed that among recipes (Idli Appe) adding Powder dried beetroot leave product acceptable when compared This concluded these innovative value-added can supplement a wide range with effective utilization low cost
